You probably don't need a full-time team. You need role coverage, and those are two different purchases. One hire can't be your backend, your mobile build, your testing, and the person who gets up when the servers do something strange at 2am, so one role on paper quietly turns into three before anything ships. Renting the roles means they show up when the work calls for them and step back when it doesn't: a build phase needs all of them at once, and the quiet months of upkeep afterwards need a fraction of that. So it's worth asking what drives your hiring plan right now, the work actually in front of you, or the busiest month you're bracing for.
